"At As de Tablas we offer a different experience in which the basic concept is sharing," explains Víctor Sánchez. Their specialty is the boards, which they prepare by region, and one of the queens is the Asturian, which consists, precisely, of a cachopo.
134 restaurants entered the contest, and As de Tablas took second prize. “It is something very important and that has given us a lot of name” they say proudly “the chef only has fifteen minutes to prepare it, and the judges decide, in a blind tasting, which ones are the best”. One of its secrets is to cook the cachopo for an exact number of minutes at a certain temperature, so that it does not open and remains golden on the outside and juicy on the inside.
