St. Martin and Christmas at Schwaiger

The goose, a German tradition

Tradition says that San Martín de Tous did not want to be a bishop, so he hid from the conclave. A young goose betrayed him with his squawks and earned for his kind to be cooked as an offering on the day of the feast of the Saint.

The tradition is particularly prevalent in Germany and is considered a kind of prelude to Christmas.

Central European style roast goose

The Schwaiger Restaurant recovers and transfers this tradition to Mallorca so that the island can also enjoy the goose season. "We celebrate them by cooking the goose in the Central European style_ says Cristina Pérez, partner, director and head of the room_ it is baked in the candied oven at 68º for seventeen hours."
