“When someone comes to the restaurant and tastes the stuffed aubergines, they are surprised because it reminds them of those made by their mother or their grandmother,” says Javier Gutiérrez, the soul of this restaurant located, almost, in the avenues of Palma. "The secret is in the homemade fried tomato."

When passing in front of La Balanguera, something calls the passerby. Not in vain behind these walls is a cozy restaurant decorated in the French style of the middle of the last century. A world apart in which the traditional cuisine of Mallorca is enjoyed, both from the stove and at the table.

Rescuing the ancient recipes of Tomeu Esteva

Javier Gutiérrez learned to cook with his mother and for this reason all his dishes are "generous", as in any mother's house. One of his great successes is having rescued the old recipes of the master Tomeu Esteva. "My mother kept them and in them he explains how to make the arrós brut, the greixera d’ous, the fish rice ... but in such a way that their flavor transports them to childhood"
